Prepares foods for patient tray delivery, employee cafeteria and hospital catered events. Food preparation is performed using established quantity and quality standards with a HACCP type food safety program. Completes cleaning and sanitation duties according to department policies and assists management with placing and receiving orders.
Requires experience with food preparation, proper food handling procedures, and sanitation techniques. Requires formal or on the job training in institutional cooking and experience in institutional quantity food preparation.
Must have knowledge of therapeutic diets; proper food handling techniques; hospital food service and dishwashing equipment; proper food service sanitation techniques; hospital sanitation techniques; proper techniques of storing, preparing, holding, and service of perishable meats, dairy products, fresh produce, and frozen foods; JCAHO, Title 22, and Yolo County Health Department requirements.
Must be able to read and write English; understand and follow written and oral directions; work with a variety of personalities under close supervision; establish and maintain a cooperative working relationship with kitchen and cafeteria employees and hospital staff; observe safety regulations for handling food and food service equipment; meet schedule requirements and time deadlines; work independently but know when to ask for help; make frequent independent decisions, within department guidelines; coordinate efforts with other cooks, food service workers, cafeteria and catering workers; work sharp knives, steamers, electric slicer, mixers, buffalo choppers and food processors; work under pressure and accomplish multiple tasks simultaneously; be adaptable and willing to perform a variety of tasks as assigned.
